#2 Pavlova with Cream Chesse and Strawberry

Assalamualaikum,

Firstly, I just wanna say Happy Teacher's Day to all my teachers especialy SK Seberang, SK Bandar and SMK Tengku Intan Zaharah, you all are the best teachers! And also to my beloved parent that also a teacher, thanks for thought me everything ! ;)


So for teachers day, I bake something!~~ Hihi but I finished it all alone :P This sweet dessert is PAVLOVA, not Pavlove or Pavlonely like what I mention before as a tittle at my missing post ==" Wa ingat nak post luse , or lambat lagi actually but Nurin comel kite tanye. HIHI Before we bake, as usual we need some ingredient. So, here it is:



For the pavlova:
4 large egg whites with no traces of yolk, at room temperature
Pinch fine salt
1 cup granulated sugar
2 teaspoons cornstarch
1 teaspoon distilled white vinegar(if tade use limau nipis pun okay)
1/2 teaspoon vanilla extract

For Cream cheese:

1 package cream cheese at room temperature
1 white egg
1/3 cup powdered sweetener (but I use sugar XD)
1 teaspoon vanilla extract

For Topping:
1 1/2 cups fresh berries, such as raspberries, blackberries, blueberries, or sliced strawberries

HOW TO MAKE IT?

  • Firstly, letak 4 egg white dengan garam dalam bowl then putar sampai ia bertukar warna to lighten in color and only small bubbles remain, about 2 minutes.
  • Then masukkan sugar, sedikit demi sedikit and putar selama 3 minit sampai dia bertukar jadi cream like this;
  • Remove the bowl from the mixer and sift the cornstarch through a fine-mesh strainer into the meringue.

  • Drizzle with the vinegar and vanilla and fold into the meringue with a rubber spatula until no streaks of vanilla remain, being careful not to deflate the whites.

  • Using the rubber spatula, pile the meringue into the center of the circle drawn on the parchment paper and smooth it to the edges of the circle to form a rough, even disk about 1 inch tall. (If the parchment shifts while spreading the meringue, weigh down two opposite corners with small, heavy objects like cans. Make sure to remove them before baking.)
  • Bake until the meringue is firm to the touch but slightly soft in the middle for 200°F about 60 minutes. Remove from the oven, place the baking sheet on a wire rack, and let cool completely. Run a thin metal spatula under the pavlova to loosen.
  • Carefully slide onto a serving platter or cake stand; set aside.

Perparation for the CREAM CHEESE:

  • I did this once the pavlovas had completely cooled. In a bowl, beat the cream cheese until it’s nice and smooth.Add white egg and stir. Then add in the sweetener/sugar and thoroughly combine.Add in the vanilla and beat some more.
  • Finally if korang suke just add in the 1/2 cup of thawed berries (and whatever juice they yield) into the cream cheese mixture and beat until completely incorporated(if you don't wat to just ignore this step) :)
  • You can now either spoon or pipe the mixture into the wells in your pavlovas! If you would like to top these with strawberries, now is the time!
